Loaded Baked Potato Casserole

This casserole is the all-time most popular recipe on my blog and YouTube channel, so I just had to include it here. I make it for every RV trip, at the insistence of my entire family.

Make Ahead

YIELD: 8 SERVINGS

PREP TIME: 20 minutes

COOKING TIME: 45 minutes

Butter or nonstick cooking spray

2 pounds baby potatoes, approximately 15 to 20

1 pound bacon, sliced crosswise into ½-inch pieces

1 whole, cooked rotisserie chicken, meat removed and shredded

1 (12-ounce) bag frozen broccoli, warmed in a microwave or on the stovetop, drained

1 bunch green onions, white and green parts, sliced crosswise

1 teaspoon salt

½ teaspoon pepper

½ cup chicken broth

2 cups sour cream

2 cups shredded cheddar cheese, divided
